A little information about the Texas Open. Traders` Village has informed me RV`s can start arriving Thur morning. For all the cooks that were there last year we cooked under the BLUE pavilion which was straight as you came through the pay booths. This year we are cooking under the BROWN pavilion. It is to the left of the BLUE pavilion. You will turn left after you pass the pay booths, drive to the end of the pavilions and turn right.There will be signs to show the way. Grab your gear, load the RV, and head to Traders` Village in San Antonio, and YOU may be the 2012 Texas Open Chili Champion. Have a safe trip.

Well another fun filled weekend cook off at the Outwest Bar and Grill in West, Texas.  It has once again come and gone, and again Mike and Wanda went out of their way to treat all of the cooks wonderfully,  We had GREAT food! Yes, it was COLD and WINDY, so for those who wanted to, they were able to cook INSIDE.  Mike and Wanda are already looking forward to NEXT year!!!!! I want to thank all of the cooks who came out on both days.  Without you, we could not have had such a successful cook off on either day! SATURDAY 2-11-12, we had 35 cooks. I want to thank my Head Judge Mark Sanders who was also my final table monitor. Thanks also to my referee: Dee Palmer, my Monitors: Dee Palmer, T.J Friedel, Bob Puillman, my table runner, Kriss Stewart, my tally team: Blu Kriska, Kirss Stewart, Dee Palmer, Glenda Verba....and to anyone else I have either forgotten or gotten wrong.  Please forgive me, it is not intentional. On SUNDAY, we had 15 cooks and I would like to again thank all who came out again. Thanks to my Head Judge, Dee Palmer; my table monitor: Dee Palmer, my tally crew: Blu Kriska, Jason Goains, Jim Trietsch and y table runne,r Glenda Verba, Now onto the winners.......

Feb 17, 2012-001 - Waxahachie, TX CASI. NOW Pod No Frills CCO The NOW Pod No Frills CCO will be held at the Ellis Co. Expo Center in Waxahachie which is off of Hwy 287. Gates open at 10 am Friday morning for early arrivals - plenty of RV Parking, no hook ups. No need to fear cold weather - it'll be warm inside the Expo Center! We will have a stew dinner and free beer for chili cooks!! The Friday Night CCO will also feature a live band this year. Come early, stay all weekend and get those Terlingua points! Feb 18, 2012-001 - Waxahachie, TX CASI. 11th Annual Gingerbread House CCO The 11th Annual Gingerbread House CCO will be held at the Ellis Co. Expo Center in Waxahachie off of HWY 287. Entry fee for CASI Chili is $20, entry fee for 50/50 Beans is $10, entry fee for Juniors is $10 (ages 8-17) and the entry fee for Novice is $16. Turn in for all categories is 1 pm. 1st Place CASI Chili will receive a Wendell Rankin Hand Painted Stove and we will also be raffling off our often imitated but never duplicated Ellis County Style Liquor Baskets!!!
