From Roger Foltz:
I met with the marketing representative from Lone Star Park, Kim Bordano, to review the upcoming cookoff on May 8th. They will have a special area fenced in for us to cook and do show. This area is paved, and they will provide all canopies, for a uniform look. We will have to unload cooking equipment at the cooking area and move the vehicles to the closest parking area, which is normally a reserved area, then bring vehicles back probably two at a time to load back up when announcements have been made. You do not have to wait until 6:45 to load back as was previously announced. The reason for the late loading was they will name a race after CASI and had scheduled it for one of the later races in the day. They have moved it to the 6th race, and want the top ten finishers and top 3 show teams to go to the winners circle after announcements to have their picture made with the winning horse and jockey. Lone Star Park is excited about this cookoff and will have plenty of activities, including a petting zoo & live bands beginning at 1:00.

Lone Star Park really wants to grow this event in future years and is very excited about it. Come on out Saturday May 8th for a great time. Please bring extra chili for public tasting.

From Jack Heath:
My son Buzz, has had a relapse with that dreaded MS, and is at the Citizens Hospital, at Victoria, Texas and has only a little movement in his right hand, but not enough to hold anything.
Please include him in your prayers.

From Dave Hewlett:
Well the wind blew but the sun was out and it was a good day at the 7th Annual Cow hill Chili Fest/ BBQ cook off in Commerce, TX. This year they put the CCO in the Market area where we could have space for RV’s and dogs could come and be part of the event. Dogs were not allowed in the town square but they were ok in the market area. There was a lot of good events like BBQ Ribs, Beans, Salsa, Wings and Chili to view and taste. Many vendors were there to sell their wares. Good food and drinks. This is a very good chili cookoff with lots of space and fun.

The GPM will be in Salado, TX this year. They are having a Raffle where the 1st prize will be $1000 and the 2nd prize will be a handmade quilt. The tickets will be $5 each or 5 for $20. The DAM pod has purchased 25 tickets for $100. Hope the DAM pod wins. We will then donate the money to a worthy cause yet to be decided. In addition, I have some tickets that I am selling for the GPM. If you are interested let me know and I will have them at all the cook offs that I am at. In addition, I can send the tickets to you if you want to purchase some from me. If so send me $5 each or 5 for $20. Please note they are considered a donation to a charity. Make checks out to GPM2010.

Several of the PODS have decided to buy $100 worth of tickets in hopes that the pod will win the cash. The DAM POD and the SOT pod are 2 that have purchased tickets. I am hoping that other pods will take up the challenge and buy a block of tickets to show support the GPM 2010. In addition the DAM pod is also selling the raffle tickets at chili cook offs during the year to help the GPM and their quest for funds to make the GPM a great one. Please consider getting extra tickets and selling them at you CCO’s. You can get your tickets by emailing Diana Stimson (Winksintexas@aol.com). She will in turn either reserve a block of tickets for the pod and will give them to the GP delegate at the GPM before the drawing or will send you some tickets. You can mail your check to Diana Stimson at 330 S. Ave B, Crawford, TX 76638. I hope the other pods will take the challenge and purchase some tickets. Tickets will also be on sale at the GPM.

In addition the Black And Gold pod donated $500 to the GPM. Please consider this message as a way to support your CASI GPM.

Make checks out to GPM2010. Donna Conrad is running the GPM this year and she has a checking account set up named GPM2010.

Please pass this on to others. They do not have to be there to win.

From Debbie Turner:
My life has changed dramatically in less than 30 days. As mentioned earlier, on March 22nd, my Father passed away, he was almost 93 years old and one day short of his 65th wedding anniversary. Then in less than a month, on April 20th, my Mother passed away, she was 93 years old. Both parents had health issues, so neither passing was unexpected, but of course the family feels a great loss. They are now in a better place.

My parents were in Assisted Care facilities for close to 10 years. I saw the great need the elderly have for attention. A visit, phone call, letter or card brings a bright spot into their lives. A few minutes of your time brings hours of joy to theirs. So, if you are inclined to send me a card, you can best honor my parents by sending one to an elderly relative or friend instead to let them know you are thinking about them, or call or visit and just send me an e-mail or add a condolence to the funeral homes web site: http://www.bozemitchellmckibbin.com/  for Elmer and Olga Eiland.

From Susie Shaw:

Article on the Baghdad CCO from Frank & Kathryn Guzman:
Kathryn’s Texas Kitchen
By Kathryn Williams-Guzman
May 16, 2010

The Terlingua International Chili Championship (TICC) was held in November 2009, outside of Terlingua, Texas. Roxzanna Ponce DeLeon and her husband, Robert Broncy, were there last year. Roxzanna is in the military, had already served one tour in Iraq and was due for her second tour. An idea was born to some CASI members to hold a chili cookoff for our troops in Baghdad, Iraq, upon her return. She credits Jeff Johnson as the catalyst for this first ever chili cookoff in Baghdad. She said, “We had no idea where it would go past the Chihuahua Desert sunset.”

If you don’t know anything about CASI (Chili Appreciation Society International), it’s a 501(c)(3) charitable organization. Every CASI sponsored chili cookoff’s profits are dedicated to at least one charity. The slogan is “Chili, Charity and Fun.”

As you can probably guess, CASI members are a very giving community. When the call came (actually an e-mail) about the first ever Baghdad chili cookoff, members quickly responded to make it happen.

Ken Rodd, Former CASI Director said “Many challenges were presented – some known and some unknown that had to be solved. Jenny Windsor took the challenge to make the Baghdad chili cookoff happen and started working on it.”

The first challenge was chili meat. “Walmart has not opened a Super Center in Baghdad yet.” Ken said. CASI member Donna Conrad met this challenge by getting 200 pounds of meat donated and shipped. Mild Bills Spice’s, a CASI sponsor, made a commitment to send spices to Baghdad.

After meat and spices, Ken said they realized “Military people going into an area of military conflict do not carry items necessary to cook chili! Something that we did know we needed was pots to cook chili in – again not readily available in Baghdad,” Ken said. “I sent out an email to many chili cooks and some friends asking if they would donate a 3 quart pot and send it over. That began the ball rolling that took on many positive results from many caring CASI members and even non CASI members.”

One of Ken’s friends in Florence, Oregon, is a member of a weekly coffee group of 20 vets. They do many things to support the military. His friend, Tom, told the group about the Baghdad cookoff and they passed the hat, collecting $300 for the cause.

Ray King, a CASI founder, called wanting to know how many pots were needed. Seven had already been donated by CASI members. Ken said, “Ray was going to a CASI chili pod meeting that night and said he would propose the group support this effort. Two hours later Ray called back saying he had $750 donated for pots and shipping costs! It came from personal donations and the CLASSIC CASI Chili Pod.”

“Now we are on a roll,” Ken said. “Whooooooooooooops -- what about beef and chicken broth, bouillion cubes, tomato sauce, and Sazon Goya? By this time CASI members were e-mailing asking how they could help. When told what we needed, the items were donated and shipped. God bless the internet as well as our wonderful chili cooks and friends!”

Ken added that “Bruce Foods, a CASI Sponsor, donated Mexene chili powder, Louisiana Original Hot Sauce and Cajun Shake. Passport America, a corporate member of CASI, sent over 25 cans of broth. Carefree RV Resorts donated a $50.00, $30.00 and $20.00 Wal-Mart Gift Card for each of the top three chili winners.”

According to Ken, “We felt we had everything until someone mentioned – do they have measuring spoons? Well, no! The Black Gold POD from West Texas jumped over the obstacle course and sent the spoons plus can openers. Now we are all set. Right? NOPE! What about cups and spoons for judging the chilis? Again, three CASI people came to the rescue and sent them to Baghdad. David Richardson even went so far as to make up the judging cups completely before he shipped them.”

Meanwhile, in Baghdad, Roxzanna had the bull by the horns to get the chili cookoff going. “Once I landed in Iraq, my second deployment to the Middle East in the span of two years, I got the support of my unit commander. I am not one to shy from a challenge, but I knew this was something I could not do alone. This would be something special and fantastic, a first, and that it had to be shared with the most amazing folks I know, my Chili Family.”

Two logistical sites had to be set aside to store all the goods as they began arriving for the cookoff. “On this side of the pond the word spread fast and the excitement was palatable,” Roxzanna said. “My team was assembled, posters were plastered all over the place like an advertisement for Woodstock. Interviews done and AFN (Armed Forces Network) Radio ran a bit as well. The USO folks searched high and low for a local artesian (not too far really, just across the base) and came up with fantastic trophies. We were set.”

Roxzanna wrote in her newsletter that “Easter Sunday came and it could not have been a more glorious day. Not a cloud in the sky and the weather was right. By 9:30 it started to resemble the beginnings of a CASI cookoff. Folks started pulling up in their HUMV’s and armored vehicles, sounds of M-16 metal clamoring about replaced by the sound of frolicking dogs, camp chairs were unfolded, EZ-ups erected, tables came out, grills and coals were at the ready, and last but not forgotten, the preverbal dragging out the coolers…filled to the brim with Neer Beer…yes, Neer Beer. All were long fully day-dreaming about a Coors or Miller Lite. Me? The national beer of Texas would have suited me just fine.”

“By the time the cooks meeting took place my fears were quelled,” Roxzanna continued. “We had 20 cooks and 7 show teams. I had lofty dreams of a grander number, but considering my competition for the day I was not complaining. Participants graciously retrieved their donated supplies and headed out.”

Ken and Jenny also requested that those of us who donated a pot for cooking chili include a favorite chili recipe in it. Here is the one we sent.

Frank’s Mesquite, Texas Chili
Makes one 3 quart sauce pot of chili

Ingredients
1 pound beef, grind, cubed, or ground
1 medium onion, chopped fine
2 cloves garlic, minced
1 cup beef broth
1 8 oz can tomato sauce
½ cup chopped tomato, peeled if fresh
½ cup your favorite chili powder
1 tsp salt
½ tsp seasoning salt
¼ tsp black pepper
1½ cups water
2 rounded tsp cumin

Other Items Needed
Measuring cups and spoons
Cutting board
Chef’s knife
Sauce pot
Wooden spoon
Can opener
Tasting spoon

Instructions
Brown chili meat in sauce pot until light brown, then drain.
Add minced onions, garlic, and beef broth. Cook on medium flame, about 5 minutes.
Add tomato sauce and chopped peeled tomato. Stir until all are well combined
Add your favorite chili powder, salt, seasoning salt, black pepper, and water. Stir all ingredients and liquids as needed. Simmer for 15 minutes.

Add cumin, stir well and simmer 20 minutes.
With home-style, not competition, chili, we serve it with pinto beans, chopped onions, chopped jalapenos or Serrano peppers, and grated cheese. Also, corn tortillas or cornbread are great accompaniments

Good luck and best wishes from:
Frank & Kathryn Guzman

Thank you for serving our wonderful United States of America.  We really appreciate all you terrific people are doing for us.

God bless Texas and the United States of America!

Besides making a new chili e-mail friend with Roxzanna through this adventure, Frank and I also received two very gracious notes of thanks from our brave military who received our chili pot and recipe in Baghdad. The letters were very humbling. The fact that our small contribution could improve the morale of our brave young military members even for one day meant so much to us.

Until next time…
Bon appétit!

Well, It is Friday again.  Here's hoping everybody has a Great Weekend cooking chili somewhere!!  Good Luck!!

Thursday, April 22, 2010

From Margaret Nadeau:
What a great time at Ladies State - congratulations Jean Barkley, well done.

Thank you Steve for all you did to make the Friday night cocktail party so special and surprising us all with the best cake ever! Thank you to all our friends who helped out and who came to visit, it was grand.

Special shout out to all the cooks who donated their remaining chili from Sunday's cook off in Seguin towards the MS 150 fundraiser at The SCOOTER Store. The fundraiser took place on Tuesday of this week, it is the second year for the lunch and each year the event get's bigger and bigger. My co-workers all donated the necessary food items to go with the chili, we fed over 140 people at $5/ea for Chili Frito Pie. An extra incentive for a donation was a chili gift basket that included a $25 gift certificate donated by Mild Bill's Spices. In total we raised $700 for MS. What a joy it is to have a great hobby where so many people have such big hearts. Could not have done this without all of you. Happy Chili Trails, Margaret Nadeau

From Sue Caffey:

From Roger Foltz with an Answer to Bob Coats:
Bob,

In reply to your inquiry about the Baghdad CCO, notices were sent to everyone we could think of. I sent notices to Associated Press and United Press International, and at your suggestion to the Sean Hannity Show and others. Jeff Schrade sent notices to contacts he had at all the Armed Forces newspapers, and Jen Windsor sent out notices to contacts she had, and had a TV interview about the CCO. I know Ken Rodd sent out notices. I'm not sure what else you expect us to do.

As far as the results, I'm sure that as soon as we get them they will be posted, and we'll send that info out to the same folks mentioned above. Those folks over there have much more important things to do than to rush the results back to CASI.

From Dana Plocheck:
The May issue of the Terlingua Trails is available for viewing on the CASI website. Thanks again to everyone for their articles and pictures; I could not do the Trails without your help. Remember, the deadline for any articles or Ads is the 15th of each month but if you can get it to me earlier it’s greatly appreciated.

From Bob Coats:
We opened the barn door, is the horse is gone?

I am told the event in Iraq was a huge success. Other than 4 pictures on the ED’s report there has not been much information available to the public. The event took place on Easter Sunday. To date the winners have not been available. I wonder what type of advertising was sent to the various new agencies.

It appears that CASI has missed a prime opportunity to tell the world about our organization. There was an article in the Army Times. That is great, what about the rest of the world. At the Directors meeting in Irving I asked what was being done about advertising for the event. I was told the news releases were complete but no one knew who was in charge for dissemination of this information or who the outlets were being contacted.

Has anyone gathered additional information on the contestants other than name, rank and unit? Any information about their home town and state? Was there anything sent to the local paper in their area. There are too many questions to ask in this letter. I really hope my fears of nothing being done is unfounded. If additional information is forth coming, I would only ask why so long in telling the world about the event?

When news is withheld for an extended time it becomes like dead fish, it starts to smell.

The opinions expressed in the letter are my own. If you agree or disagree with me, please feel free to contact me via E mail. thechiliman-1999@hotmail.com
