Knights of Columbus Council 2971 Chili Cook-Off, Saturday, January 8th, 2011, Knights of Columbus Hall, 2 miles west of Columbus on IH-10 frontage road.  Set up at begins at 7:00am, registration begins at 7:30 a.m.  Categories are CASI Chili, Local Chili, $20 entry.  Pinto Beans, Salsa and Margaritas $15 entry.  Beans, Salsa and Margaritas are jackpot categories paying 50/50 split in each category.  The event benefits Knights of Columbus State and Local Charities.  Teams must bring everything necessary for cooking outdoors. Amarillo, TX:  Hope everybody had a great Christmas, and is making plans to attend the annual New Year's Eve Chili Cookoff/party.  The Cookoff will be held at the Campbell's shop, 517 W. 48th (next to Sutherland's just off Washington).  There is a black eyed pea cookoff, and casi rules will apply for the chili.  Bring a snack to share, and dress warm...the shop has minimal heat.  Bring a friend, either to cook or judge.  See ya there.

'Twas the night before Christmas, and all through the south,

cooking Chili was all they were talking about.

The propane was full and the Chili pot clean, 
in hopes the next cook-off would not be so mean.


Clyde and Charmaine were snug in their bed,
while visions of The Open danced in their heads.


And Mama Sue Cafey, with John by her side;
when it comes to Chili they have nothing to hide.


While over in Houston there arose such a clatter,
seems we were hearing Keith and Michael’s chatter.


Away to a meeting, Susan flew like a flash,
leaving Ken at home, to take out the trash.


In Marshall this year it had started to snow;
Mack was working hard just to make the water flow.


Then up in the hill country did Carrie appear,
with Doc dressed as Santa, and a bunch of reindeer.


With all of the cook-off’s coming up quick, 
we knew it would take good Chili to do the trick.


From Dallas and Houston and S.A. they come,
even George West, and Weesatche and Cuero send some.


There’s Ed and there’s Vern and Chuck and then Tim,
with Sherrie and Karen and Dana and Kim.


To the men’s championship and the ladies’ as well,
it looks like the Causey’s will be giving it hell.


As ground meat is needed for every day, 
Donna will deliver wherever you play.


So it’s off to the east, the north, south then west, 
all with a plan just to prove who’s the best.


And then a strange thought, comes into each head;
it‘s not just about winning, but the friendships instead.


As we travel to cook, in each new town,
there is nothing but thanks for the friends we have found.


From the cold of the winter, to the heat of the sun,
there’s someone like Mayo to make sure it is fun.


With a party that starts as soon as you arrive,
not close to ending after announcements at five.


It goes on all night, by the light of the moon, 
though tomorrows’ turn in is at high noon.


The points are important, and this we all know,
to get to Terlingua to cook or to show.


To Tom and Susan and all qualified,
