The Best Party In Texas is coming up on New Years weekend.  There will be a "Just Because" CCO on Thursday with turn in at 8 P.M.  Friday is a Free Day.  Carrie has been up to her elbows cooking up chicken spaghetti to serve our guest on Friday evening before the New Year Party at The Kinnison Camp which will happen about 6 P.M. Side dishes are welcomed so please contact her at cak@erfw.net or 281-615-2408 if you would like to share to the menu.  The music starts at 8 P.M. and the Legion will have party favors,champagne, black eyed peas and cornbread at midnight.  BYOB or beer... .setups will be available for a small fee and admission is $10 per person for chili cooks.  Dress is nice casual or you can wear your party clothes. 

Saturday....community breakfast at 9 A.M.  There will be Sausage gravy, biscuits, breakfast casseroles, pastry, fruit, juice and milk.  Chili turn in at 2 P.M.  Cooks meal served by the Legion Ladies Auxiliary an hour or so after turn in and awards.  Please bring a desert or horsdoeuve to share with this meal.  Pack your PJ's  and get comfortable for fellowship and fun.  There will be dominos, cards and games ..
Sunday...community breakfast at 9 A.M.  Breakfast tacos, fruit, pastry, juice and milk.  Chili turn in at 1 P.M.
There is a nice parking lot to park RV's, please be patient as we need to park efficiently to get everyone parked.  Please do not park or walk your pets across the street in the residential area.  If you have been to these CCO's and party you will want to return.  Let's WELCOME the New Year in together with our chili family.   The COMMUNITY BREAKFAST  is for all to share and to give us all a Jump Start for the day.  Please sign up to contribute to the breakfast with Carrie.  Bring your items to her early so that she can make a store run if necessary.  Volunteers to help are welcomed.  THANKS AND LET'S HAVE A GREAT WEEKEND.

Knights of Columbus Council 2971 Chili Cook-Off, Saturday, January 8th, 2011, Knights of Columbus Hall, 2 miles west of Columbus on IH-10 frontage road.  Set up at begins at 7:00am, registration begins at 7:30 a.m.  Categories are CASI Chili, Local Chili, $20 entry.  Pinto Beans, Salsa and Margaritas $15 entry.  Beans, Salsa and Margaritas are jackpot categories paying 50/50 split in each category.  The event benefits Knights of Columbus State and Local Charities.  Teams must bring everything necessary for cooking outdoors. Amarillo, TX:  Hope everybody had a great Christmas, and is making plans to attend the annual New Year's Eve Chili Cookoff/party.  The Cookoff will be held at the Campbell's shop, 517 W. 48th (next to Sutherland's just off Washington).  There is a black eyed pea cookoff, and casi rules will apply for the chili.  Bring a snack to share, and dress warm...the shop has minimal heat.  Bring a friend, either to cook or judge.  See ya there.

'Twas the night before Christmas, and all through the south,

cooking Chili was all they were talking about.




The propane was full and the Chili pot clean, 
in hopes the next cook-off would not be so mean.


Clyde and Charmaine were snug in their bed,
while visions of The Open danced in their heads.


And Mama Sue Cafey, with John by her side;
when it comes to Chili they have nothing to hide.


While over in Houston there arose such a clatter,
seems we were hearing Keith and Michael’s chatter.


Away to a meeting, Susan flew like a flash,
leaving Ken at home, to take out the trash.


In Marshall this year it had started to snow;
Mack was working hard just to make the water flow.


Then up in the hill country did Carrie appear,
with Doc dressed as Santa, and a bunch of reindeer.


With all of the cook-off’s coming up quick
we knew it would take good Chili to do the trick.


From Dallas and Houston and S.A. they come,
even George West, and Weesatche and Cuero send some.


There’s Ed and there’s Vern and Chuck and then Tim,
with Sherrie and Karen and Dana and Kim.


To the men’s championship and the ladies’ as well,
it looks like the Causey’s will be giving it hell.


As ground meat is needed for every day, 
Donna will deliver wherever you play.


So it’s off to the east, the north, south then west, 
all with a plan just to prove who’s the best.


And then a strange thought, comes into each head;
it‘s not just about winning, but the friendships instead.


As we travel to cook, in each new town,
there is nothing but thanks for the friends we have found.


From the cold of the winter, to the heat of the sun,
there’s someone like Mayo to make sure it is fun.


With a party that starts as soon as you arrive,
not close to ending after announcements at five.


It goes on all night, by the light of the moon, 
though tomorrows’ turn in is at high noon.


The points are important, and this we all know,
to get to Terlingua to cook or to show.


To Tom and Susan and all qualified,
we would love the chance to cook by your side,

Both Temple H-E-B Cook- Offs were COLD and WINDY but both H-E-B's were pleased with their turn out's and of course the employees LOVED to judge.  Both H-E-B's are once again planning for next year! I would like to thank all of the cooks who came out.  With out you, we could not have had the 2 successful cook offs we did! The January issue of the Trails is now available for viewing on CIS.  It was also sent to the printer on Saturday and hopefully will be mailed out by end of this week.  Apparently there were some problems with deliveries last month so if you do not receive your January issue by January 10th please advise.   Due to the holidays the mail may be slower this month but I hope we don’t run into a problem like we did last month.  I apologize for any inconvenience this caused anyone.

Thanks to all of you who emailed, Facebooked, and called following my vehicle accident last week. It's hard to to believe that the other driver I walked away with minimal injuries considering the circumstances. I've long known that chili cooks are the greatest friends and family in the world, and this just reiterated that fact!

The Cook off at the Hog Creek IceHouse has come and gone and we had a nice turn out even though we had cold and windy weather on most of th, but please forgive me in advance if I leave some one out. Thank you to the Hog Creek IceHouse for allowing us to hold our event there once again, and a Big Thank you to Jim Shilling from Tyson's Food for attending all three nights and for EVERYTHING he does for CASI! Thank you to Diana McMillain and Dee Dee for coming out and doing a wonderful job of announcing for us! Thank you to my head judges John Caffey and Randy Duke. My tally teams John Caffey, Billy Doss, Steve Ashman, David Manske, Mavis Nelson,David Lefler, Randy Duke. My monitors, Debbie Ashman, Neal Doss, Randy Duke, Kay Lefler, John Caffey.My Table runners Donna Conrad, Jennifer Collier, Diana McMillian, Dee Dee and of course all of the chili cooks who with out you we could not have had a successful cook off! Hopefully next year we can build this cook off up especially for Tyson considering EVERYTHING they do for CASI and the LEAST we can do for them is to give a little back by SUPPORTING THEIR CHARITY!!!
