Jan 14, 2012 – Amarillo TX CASI. Tri-State Open Chili Championship. Held in Rex Baxter Building on the Tri-State Fair Grounds. Benefits Make-A-Wish Entry fee $25.00 and turn in 1 PM. Ground Meat Only. Top 3 chili’s and 1st place show automatically qualify for TICC. Cooks party Friday night with a meal and breakfast on Saturday morning.

The Buzzard Bar Cooking Team 2011 version

Twas the night before Christmas and all through the South
Cooking Chili is all they were talking about


The propane was full and the Chili pot clean,
in hopes the next cookoff would not be so mean.





Roland and Melissa were snug in their bed,

while visions of Terlingua danced in their heads.




And Mama Sue Cafey, with John by her side;


when it comes to Chili they have nothing to hide.




While up around Austin there arose such a clatter,

seems that the SOT pod was getting together.




Away to the store Cindy flew like a flash,


looks like Randy had thrown all there stuff in the trash.




With Kenny and Susie cooking so fine;

has Traci and Tricia drinking more wine.





Then up in the hill country did Carrie appear,


Doc dressed as Santa, with Mike and Joe as reindeer.





With all of the cook-off’s coming up quick,

we knew it would take good Chili to do the trick.





From Ennis and Boerne and S.A. they come,


even George West, and Cuero and Hye will send some.





There’s Ed and there’s Glenn and Chuck and then Tim,

with Sabrina and Susan and Diana and Kim.






To the men’s championship and the ladies’ as well,

it looks like the Seelig’s will be giving them hell.






As ground meat is needed for every day,

Donna will deliver wherever you play.






So it’s off to the east, the north, south and the west,

all with a plan just to prove who’s the best.





And then a strange thought, comes into each head;

it‘s not just about winning, but the friendships instead.




As we travel to cook, in each new town,

there is nothing but thanks for the friends we have found.





From the cold of the winter, to the heat of the sun,

there’s someone like Mayo to make sure it is fun.




With a party that starts as soon as you arrive,

not close to ending after announcements at five.



It goes on all night, by the light of the moon,

though tomorrows’ turn in will be at high noon.




The points are important, and this we all know,

to get to Terlingua to cook or to show.




To Larry and Tom and all qualified,

we would love the chance to cook by your side,

so the rest of us aren’t stuck in the fog.

As it has gotten closer to time to cook,

I think this damn poem has turned into a book.
