We have finally arrived at home from Texas Open. We just sort of blew in! There were 2 very good days of chili cooking. On Saturday there were 218 chilis turned in. This allowed the top 5 winners to be automatically qualified.

Tony Oliveria passed away Thursday evening in his sleep. He has had a long battle with cancer. Visitation is Sun Feb 27 from 6-8 at the Holy Rosary Catholic Church in Memphis, TN. Rosary Monday Feb 28 at 1:00 PM at the church. The funeral will be held at the Memphis Funeral Home. No more details at this time.

In case you have not heard, Nancy has been diagnosed with breast cancer. She has had three biopsies in the past two weeks; two were benign and one was malignant. Texas Ladies State contributions
As of February 23rd, twenty-nine ladies have contributed $1495.00 to the scholarship fund in lieu of giveaway items for Ladies State. This is a great start and we still have 5 days until March 1st.
Scholarship applications
One hundred (100) scholarship applications were received this year. The applications are being mailed to the committee for their review. They will make their selections by the end of March.

This being said, we are asking those of you that have Hawaiian Shirts to please bring them and wear them at least for the toast. If you don't have one please come see me as I have several extras that you can borrow. I picked up a few more today to help everyone. Christine will also be there for the toast.

Here is the information on the KOA Campground for the Southwest Open. It will be held on May 28 and 29 at the Choctaw Casino in Durant, Okla.
Southwest Open Chili Championship @ the Choctaw Casino RV Park
There has been several people email me regarding the cookoff location. The cookoff and 42 tournament will be at the KOA-RV Park, which is located across the street from the casino.
Here are some of the details of the Park. There are 77 – 12’ x 80’ concrete pull-thru pads, hourly security patrols, patios, picnic tables, grills, free Wi-Fi and cable TV.
The main building where the 42 tournament and judging will be held has a full kitchen, plasma TV, vending machines, laundry room, restrooms with showers, pool tables, air hockey and shuffleboard. Oh, and the most important item – AIR CONDITIONING!
You can go to www.choctawcasinos.com to see a full listing for the RV Park, get directions and print a site map.
Free shuttle service is offered from the casino to the RV Park as well as area approved hotels.

It was a great place for a CCO. The Wichita Falls ELKS put on the fed bag for the weekend (thanks guys).The Fireman were in full force, and are already planning for a bigger CCO next year. Thanks to all that bought tickets on the golf cart. A local man won it. We raised $3,000 plus for the VFD.

A reminder from Clyde Rogers concerning logistics for the Texas Open held this weekend.
There are a few items I felt would be helpful for the cooks to know upon arrival at the Texas Open.
First off, chili cooks will enter at the far right pay booth as you drive in. There is to be a sign there that says CHILI COOKS. When you enter, they will ask if you are chili cooks and how many people there are. They will give you a parking pass to be placed on the mirror of your auto. You will then proceed straight ahead to get to the parking lot where we will be set up. I first was told we could park under the canopy and tail gate cook Sat. The San Antonio Fire Department says NO. Cooks will have to unload their belongings and move their autos to the parking lot. There will be no vehicles allowed on pavilion after 9:00 am. If you are not unloaded on the pavilion by that time you have to carry your cooking items to the pavilion. I am sorry for this inconvenience, but this being Traders Village`s first event they are finding out a lot. Everyone needs to park as close as possible so that we will all fit in this parking area. This way no one will have to park in the front parking. Myself or another cook will be out to aid in the parking.
PETS. As you enter at the pay booth you will see a sign that says "NO PETS". We cannot have pets on the pavilion during market hours, meaning when Traders Village is open to the public. We will need to keep all pets at our motor homes or trailers during these hours. If needed, they can be taken to the grass area on a leash and then taken back to the motor homes.
Gates are locked at 9:00 pm each night. Security will be there. I am going to talk with them about cooks staying at hotels who will be leaving after 9:00 pm. The gates will be open at 6:30 am Saturday and Sunday morning. Be sure and check with myself or another committee member before you set up on the pavilion.
Gulf carts can be used to go from the pavilion to our RV`s.
Please do not arrive on Thursday before noon.
If you have not registered, please do so at the cook off. There will be registration Friday afternoon and Saturday morning.
Bring your best recipe so you can claim the first Texas Open Champion at San Antonio`s Traders Village. Everyone have a safe trip.

A reminder from Clyde Rogers concerning logistics for the Texas Open held this weekend.
There are a few items I felt would be helpful for the cooks to know upon arrival at the Texas Open.
First off, chili cooks will enter at the far right pay booth as you drive in. There is to be a sign there that says CHILI COOKS. When you enter, they will ask if you are chili cooks and how many people there are. They will give you a parking pass to be placed on the mirror of your auto. You will then proceed straight ahead to get to the parking lot where we will be set up. I first was told we could park under the canopy and tail gate cook Sat. The San Antonio Fire Department says NO. Cooks will have to unload their belongings and move their autos to the parking lot. There will be no vehicles allowed on pavilion after 9:00 am. If you are not unloaded on the pavilion by that time you have to carry your cooking items to the pavilion. I am sorry for this inconvenience, but this being Traders Village`s first event they are finding out a lot. Everyone needs to park as close as possible so that we will all fit in this parking area. This way no one will have to park in the front parking. Myself or another cook will be out to aid in the parking.
PETS. As you enter at the pay booth you will see a sign that says "NO PETS". We cannot have pets on the pavilion during market hours, meaning when Traders Village is open to the public. We will need to keep all pets at our motor homes or trailers during these hours. If needed, they can be taken to the grass area on a leash and then taken back to the motor homes.
Gates are locked at 9:00 pm each night. Security will be there. I am going to talk with them about cooks staying at hotels who will be leaving after 9:00 pm. The gates will be open at 6:30 am Saturday and Sunday morning. Be sure and check with myself or another committee member before you set up on the pavilion.
Gulf carts can be used to go from the pavilion to our RV`s.
Please do not arrive on Thursday before noon.
If you have not registered, please do so at the cook off. There will be registration Friday afternoon and Saturday morning.
Bring your best recipe so you can claim the first Texas Open Champion at San Antonio`s Traders Village. Everyone have a safe trip.

There has been a change for motorhomes at the Arkansas State Open Chili Cookoff March 12, 2011. They are welcome for the day but the entrances will be gated up after the event and will not open till 8:00am Monday morning after the cookoff. All vehicles must vacate the parking lot after the event. There are several places that you can go with your motorhome. There is a KOA in Benton and one in North Little Rock. There is also a Wal-Mart in Bryant that is close. We will try to find some more places and will update you. Sorry for the inconvenience.
Also if you are coming in from the west on I-30 just look for the signs that say Pulaski Tech College. These will take you to the cookoff location. If you are coming from the east take exit 128 Otter Creek exit and stay on the service road that runs parallel to the interstate.

The Out West Bar and Grill 4th Annual Chili Cook Off was held on Saturday 2-12-2011, and the Next day Cook Off was held on Sunday 2-13-2011. The weather was really nice for a change, a little windy..., but not COLD !!!! As always, Mike & Wanda went out of their way to make us feel welcomed. They had wonderful food! They are in the planning stages for next years cook off as I write this. I would like to thank all of the cooks who came out to support the 2 day event. With out you, we would not have had the successful cook offs that we did. Next, I would like to thank my head judge for both days, Donna Conrad; my tally teams John Caffey, Bill Lester, Donna Conrad, Angie Duke, Blu Kriska, and David Mankse; my Table Monitors, Johnnie Sullivan, Randy Duke, Mark Sanders, David Manske and Frances Sullivan; and Pat Pilchiek for all of her help. NOTE: Because of some inquires, it appears that there are many CCOs that are not have a Cook's Meeting. It is necessary especially when you have new cooks. It is also a good reminder to seasoned cooks. Sometimes we assume that everybody is familiar with the rules, etc. Here is what should be included in the Cook's Meeting.
HEAD COOKS' MEETING A head cooks' meeting may be held by the head judge(s) and/or CASI Referee for the cookoff. This meeting provides an opportunity to make announcements, explain rules, distribute cups, cover any local procedures or customs, and answer questions about the cookoff.
SAMPLE AGENDA
a. Opening Remarks Introductions and special announcements or instructions.
"The head judge(s) is (are) {names}. The CASI Referee for the cookoff is {name}."
b. Chili Rules Read Page 1, "Chili Cooking Rules".
c. Judging Criteria "Competition chili is blind judged based on the following five criteria: aroma, consistency, red color, taste, and aftertaste."
d. Judging Cups "Pick your judging cups up at {location}.
"When you pick up your cup, you are required to sign the removable ticket in the presence of a designated official. The number on the ticket corresponds to the number taped to the cup. This is the only way we can tell who the winner is when the ticket is removed from the cup on stage. Put your signed ticket in a safe place. If you lose your ticket, you cannot win; we must have both matching halves.
o not tamper with or remove the ticket taped on the cup. Do not mark the inside or outside of the cup or place identifying objects (e.g., floating jalapeños, bay leaves, etc.) inside the cup. A 'marked' cup will be disqualified.

We do not know what happened and we don't have any details at this point. I just wanted to let everyone know and I will send another email when I have more information.

There have been some changes for requesting a CASI Insurance Certificate. Cincinnati is now requiring an endorsement to be issued naming each person/entity listed as additional insured on CASI’s general liability policies. There is a $35 charge per name/entity. If you require an Insurance Certificate for your CCO, you must contact me and provide the following information
Your information must include:
“Re: CASI”
Name of the cookoff
Date of the cookoff
Location/Address
Who is the certificate holder (venue)
If you need to add names to this certificate other than CASI, there will be a $35.00 for each name
Who and Where to fax or mail the certificate
Once I receive this information and the Insurance Company and I have determined the cost of that certificate and you have accepted the charges, a certificate will be forward to you.
NOTES FROM THE BOARD OF DIRECTOR'S MEETING
1. The Life Membership fund is now $100,000.
2. Don Hoy was approved as Krazy Flats Coordinator for this next TICC.
3. Dorathy Williams reported that she had send 253 packets so far for the 2010-2011 Chili Year. Last year she had sent 250 packets at this point.
4. Wendell Rankin Stoves will be given away again this year to 2 cooks who cook on the Old 320. Last year we had 203 cooks in the Arena Area.
5. It was voted that we give 7 Academic Scholarships and 3 Technical Scholarships for the next year.
It is with a VERY Heavy Heart that I send this email out to you all. We lost another wonderful chili cook. I just received the call that Scott Knight, aka The Big Kahuna, passed away last night. We do not know what happened and we don't have any details at this point. I just wanted to let everyone know and I will send another email when I have more information.
Please keep Christine and Andrew in your thoughts prayers. God's Peace !!!!

What a wonderful week-end in Paradise! Beautiful weather, great friends (old and new), laughs by the bushel and lots of cherished memories. If you weren’t here, I’m sorry. You really missed a fun time. It was one of those week-ends where everything was funny. We had terrific support from our fire department and community. Well, I am back in Texas after a few weeks in warm, sunny Mexico. The cook-off was a Hugh success, with literally thousands of people coming out to taste chili and have some fun. We exceeded last year's numbers in every category, including dollars raised. This cookoff, which is also a day of entertainment, (live bands to equestrian demonstrations), benefits Centro de Crecimiento, San Miguel's center for disabled children.
On the Facebook Chili and Charros page, there are tons of photos and a video of the first San Miguel flash mob in action. All of our CASI winners were very excited, but in particular our top three were thrilled to qualify for TICC at our international event!

Tom's charros were authentic or they would have never placed in this competition. We so enjoyed Tom in San Miguel and were honored that he chose to participate in our event. Also, thanks to Jim Ezell for joining us deep in the heart of Mexico for a second year.
Scott Woodard, who took home 1st place CASI (and a beautiful Wendell Rankin stove) also was first place People's Choice winner. The People's Choice Chili prize was two roundtrip tickets on American Airlines anywhere in the US, Canada, Mexico or the Caribbean. Maybe we will see Scott cooking on the beach in St. Thomas this year!
Rose Ann Hall Designs donated custom-etched glass CASI awards for places 2nd through 10th. Rose Ann Hall is based just outside of San Miguel and hires only handicapped workers. The glassware is sold in exclusive US retail establishments. Needless to say, the CASI awards were absolutely beautiful. Many of Rose Ann Hall's employees were educated and received rehabilitation at Centro de Crecimiento. We truly appreciate their support.
Wish you all could have been in magical San Miguel de Allende for this amazing day of fun and for all of the fun days leading up to Chili and Charros! For those of you who traveled so far to support our cookoff, we truly appreciate your participation. Hope to see you next year.
